‘The Compound’ opens in Utica

UTICA — In a buildout of their business, Clinton-based eatery, The Compound, has opened a second location in Utica, according to co-owner Anna Sofer, who owns the restaurant along with husband, Sharrone Sofer.

The new site is located at 106 Genesee St. in Bagg’s Square, which Anna Sofer said offers a bigger kitchen and more room for manufacturing. 

The official grand opening was Tuesday, March 15, and the hours of operation will be from 8 a.m. to 3 p.m., Tuesday through Sunday. Sofer adds that hours will be subject to change. 

There are dine-in (check out the second-floor dining space) and takeout options. She characterized the new location as a safe space — an inclusive space to come and eat. 

In addition, there will be locally-curated food market items, and local art.

Growing roots

Sofer said the extra space in Utica was much-needed as the restaurant — which specializes in homemade specialty butters — continues to grow. “We basically outgrew our Clinton location. … This is just a great space. We really wanted to branch out,” Sofer said last week. That branching out also has grown an expanded menu.

The Utica location menu will offer a different variety of food — burgers, salads and loaded toasts — in addition to the crafted toasted cheese sandwiches which are anchoring the Clinton spot.

While the new local food stop has been getting up and running, the Clinton shop’s operation has been put on pause with a target reopening of March 23.

Sofer said that even with the expansion, it will be a bit of a struggle running two eateries at once. But, Sofer said she is learning to let go and trust her amazing staff to step up and take some things off of her plate. 

The Compound is hiring for both locations. Once more staff comes on board, hours of operation will likely expand.

History

In October of 2020, the 11 W. Park Row, Clinton location of The Compound brought specialty seasoned butters, homemade right-on-premises, and crafted toasted cheese sandwiches.

Rounding out the toasted cheese offerings on the menu at the Clinton location is local bread and cheese made local and an array of fillings besides the melty cheese to customize each order, like bacon, avocado, onion and tomato.
