Ray Brothers pop-up sandwich shop coming to Hamilton
HAMILTON — Ray Brothers Barbeque (RBQ), known for its famous ribs and other regularly sold-out meats, will offer sandwiches, tacos, burritos, and more in downtown Hamilton.
Smokin’ Brothers Sandwich and Burrito Shop is a temporary venture, explained Tucker Ray, co-owner of RBQ. They’ll hold the spot at 22 Utica Street until May 2023.
“Our main focus for this is to be something you can get fast,” Ray explained. “It’s kind of our version of a hometown kind of Chipotle-style place.”
Between locals and Colgate students and faculty, “there’s quite a few people,” Ray said, and the demand for food service is high.
The primary goal is to help fill that demand during the restaurant’s brief stay, he said.
Not much will be changed in the space left by the previous tenant, Bueno Tacos. Just a fresh coat of paint and some minor changes, Ray said. Seating will be limited to prioritize grab-and-go.
“We are going to do some unique things,” Ray said of the menu. “It’ll be some really good gourmet sandwiches with smoked meats from us,” including deli style, along with a few vegetarian options. There will be some staple taco/burrito menu items, but guests can also customize their own order. All the primary ingredients — including sauces, sides, and meats— will be prepared in the RBQ commercial kitchen in Bouckville before heading to the pop-up.
Currently, opening is set for October, with hours and other details still being ironed out. Service will be just lunch, for now, Ray said.
